When it comes to food, we all know there are many important qualities that we look for in something that is considered a "good eat." Here at Bravura Magazine, we decided to take on that quest within New Jersey, and share with our readers some of the best local eats out there, with a new segment called "Bravura Bites." Our host, Tiffani Britton, makes her first stop at one of Central Jersey's biggest South Indian franchises, Bawarchi Biryanis, in Franklin Park, NJ, where she takes us behind the scenes into their kitchen, and one of their most sought-after menu items! When one thinks of the word “biryani”, they think of the popular dish which is well-known throughout the Indian diaspora; this family-favorite is made with an array of spices, rice and can include a variety of additions, such as chicken, lamb, beef, prawn, or fish. Bawarchi customers don’t just come here because of the food they love; they come because each visit to the restaurant takes their taste pallets on a trip to India through the spices and flavors the chefs use.

“Whether you come for the 30+ varieties of biryani on our menu our our tandoori sizzlers,” states Ramesh Nuthalapati, another partner of the location, “you are coming because you know that each item on our menu will satisfy your taste-buds!”

And this brings us to the “meat” of our article (no pun intended)! When you dine at Bawarchi in Franklin Park, each dish which is served to your table leaves the kitchen, having been cooked by their highly experienced chefs. One of our favorites was the “Chicken Majestic,” and we had the opportunity go behind-the-scenes with their head chef and see what makes their chicken so majestic!
